Victorinox 40521 10-Inch Chef's Knife, Black Fibrox Handle

Victorinox 40521 10-Inch Chef's Knife, Black Fibrox Handle Review

Victorinox 40521 10-Inch Chef's Knife, Black Fibrox Handle Feature

  • Light weight and long blade make it great for cooks with larger hands and frequent big chopping jobs
  • High carbon stainless-steel blade provides maximum sharpness and edge retention; conical ground through length and depth for a wider break point
  • Blade stamped from cold-rolled steel; bolsterless edge for use of entire blade and ease of sharpening
  • Patented Fibrox handles are textured, slip resistant, and ergonomically designed for balance and comfort; NSF approved
  • Hand washing recommended; lifetime warranty against manufacturer defects; expertly made in Switzerland
The R H Forschner by Victorinox Chef's Knife features an 10-inch blade that is 2.25-inches wide at the handle. High carbon, stainless steel blade is hand finished at Victorinox in Switzerland by skilled craftsmen. A special tempering process is used to produce an edge that can be resharpened over and over again, so the knife can keep its original sharpness throughout the entire life of the blade. Victorinox handles are ergonomically designed to minimize wrist tension. They provide a natural fit. A good heft and comfortable, positive grip are indications of a well-made knife. A sure-grip handle with a finger guard is valuable feature since the handle inevitably gets greasy, wet, or both. Although cutlery steel is naturally sanitary, materials and construction details of the handle minimize crevices what would offer hospitality to bacteria.

Chef's Choice 10-Inch Oval Diamond Sharpening Steel

Chef's Choice 10-Inch Oval Diamond Sharpening Steel Review

Chef's Choice 10-Inch Oval Diamond Sharpening Steel Feature

  • Partially sharpens knives
  • Oval rod embedded with diamond dust
  • Black plastic handle, textured for sure grip
  • Wipe with damp or dry cloth, if necessary
  • Can be used right or left handed
Knife steels often are touted as sharpening tools. Few actually sharpen but do perform the vital task of realigning, or "resetting," a knife's edge, which bends this way and that when contacting a cutting surface or other hard object. Because this tool's surface contains diamond dust, it's hard enough to somewhat sharpen a blade. Somewhat is key. This won't replace a professional sharpening job, which proceeds from coarse grinding to ever-finer grinding at tightly controlled angles. This steel performs only the final grinding, during which an edge is polished. Thus, properly used it can lengthen intervals between sharpenings better than a steel without diamond dust. The rule of thumb being that a steel should be at least as long as the knife blade being drawn across it, this steel's length is fine for most household knives. Its oval shape exposes more surface to a knife's blade. --Fred Brack The oval shape of this steel allows for greater contact area between the diamond sharpening area and the blade. Comfortable to hold, whether you're a rightie or a leftie, the secure grip is non-slip.
