With a flexible blade that bends around big bones and joints, this knife will fillet a trout but works best with poultry and meats. Classic three-rivet handles distinguish Pro S from Henckels's other quality lines. Pro S handles are heavier and its knives less weight-forward. Handles are also smaller, a feature those with small hands may appreciate. The steel used in the Pro S line is identical to that of the Five and Four Star lines. In a shin bone soup the meat delicately falls from the bone after being simmered over time. But for those occasions when you have to separate meat from the bone, cooked or uncooked this knife is the ideal tool. The tip looks like a delicately bowed half spear; its point lies on the end of a straight spine where it's met by a cutting edge that rocks up to a 40-degree angle to the tip.
